Bourbon Maple Pork Chop: Thick-cut bone-in pork chop, marinated in fresh ginger and crushed garlic then pan seared with Bourbon Maple Butter. Topped with a Spiced Apple Chutney, paired with Southern Braised Collard Greens with bacon lardons and creamy local stone ground grits.   


Southern Braised Collard Greens with Bacon Lardons: Local collard greens, simmered with onions, applewood smoked bacon and brown sugar. Finished with apple cider vinegar.    

Creamy Local Stone Ground Grits: Local Stone Ground Yellow Grits from Edisto, South Carolina, simmered in milk and butter, finished with cheddar cheese.   

Spiced Apple Chutney: Tart green apples stewed with shallots, ginger, molasses and fall spices.

Maple Apple Bread Pudding: Buttery croissant bread pudding baked with cinnamon, nutmeg, and dehydrated Granny Smith Apples, topped with maple caramel and cinnamon and brown sugar roasted apples, served with vanilla whipped cream on the side.  

Local Cheese & Charcuterie: A mixed display of local meats and cheeses to include charcuterie curated by San Giuseppe in Elon, NC.  Alongside a  smoked goat cheese from Goat Lady Dairy in Climax, NC, Green Hill Camembert from Sweet Grass Dairy in  Thomasville, GA as well as a domestic blue cheese. Served with fresh honeycomb, raspberry preserves and crackers and crostinis.  ( without crackers and crostinis)

Pear Elderflower Fizz Cocktail Mix: Pear nectar with fresh lemon juice and a thyme infused simple syrup. Finished off with Charleston Cannonborough Grapefruit Elderflower Soda and paired with your favorite vodka or gin. Garnished with fresh pears and lemons.  

Tuck Beckstoffer's EST 1975 Cabernet Sauvignon, California 2018: The fresh red fruit and subtle herbs and spices in this Cab will develop the secondary flavors on this dish and tie it together.
